Contract Type: Seasonal or Permanent (Restaurant will operate yearround from 2025)
Starting Date: January 20 2024
Working Hours: 43.5 hours per week
Days Off: 2 days per week (likely Monday and Tuesday)
High Season: No days off between December 23 2024 and January 6 2025 and during peak periods in February (2 weeks)
Opening Date: December 1 2024 (Invitationonly event); December 2 2024 (Open to the public)
Kitchen Team: 2 people (Sushi Chef & Asian Chef)
Operation Hours:
Restaurant: 17:30 pm 24:00 pm
Kitchen: Open until 22:00 22:30 pm
Overtime: Extra hours or days will be tracked controlled and paid separately based on working sheets submitted to HR/Payroll.
About the Role:
We are looking for a skilled and passionate Sushi Chef to join our team at a Contemporary Asian Fusion Restaurant located in a prestigious 4 Hotel in St. Moritz. As the sole Sushi Chef you will be responsible for preparing presenting and serving sushi to high standards in a fastpaced and exclusive setting.
You will be working alongside an Asian Chef in a small but dynamic kitchen providing an exceptional dining experience for up to 50 covers. The ideal candidate must possess expertise in sushi preparation hygiene practices and menu development with the ability to work independently and efficiently.
Requirements
1. Sushi Preparation & Service:
Prepare and present highquality sushi dishes from start to finish ensuring consistency flavor and presentation.
Maintain mise en place and readiness during service hours managing the flow from prep to plate with efficiency.
Develop and execute sushi menus aligning with the restaurant s contemporary Asian fusion concept.
2. Kitchen Operations:
As the only sushi chef manage all aspects of sushi preparation including rice cooking fish slicing and rolling with precision and care.
Work collaboratively with the Asian Chef to ensure smooth service sharing kitchen space and resources.
Uphold high hygiene and cleanliness standards at all times following HACCP protocols and maintaining organized workstations.
3. Health Safety & Hygiene:
Ensure all kitchen operations meet food safety standards particularly regarding raw fish and seafood handling.
Maintain strict personal hygiene and food preparation standards ensuring compliance with all health and safety regulations.
Monitor and manage inventory for sushi ingredients ensuring freshness and quality.
4. Teamwork & Time Management:
Coordinate closely with the Asian Chef to balance workloads and optimize efficiency in a small kitchen environment.
Adapt to high season demands working long hours when necessary and maintaining a high level of performance under pressure.
5. Customer Interaction:
Engage with guests as needed ensuring a positive dining experience and adapting dishes to meet specific customer preferences or dietary restrictions.
Present sushi dishes with an emphasis on aesthetic appeal and artistic presentation.
Candidate Specifications:
StandAlone Experience: Proven experience working independently as a sushi chef responsible for all stages from preparation to service.
Skill in Preparation and Presentation: Exceptional skills in preparing a wide range of sushi sashimi and nigiri with an emphasis on creativity and presentation.
Organized & Efficient: Ability to work quickly and efficiently while maintaining high standards in a fastpaced environment.
Cleanliness & Hygiene: Strong focus on maintaining cleanliness and hygiene in the kitchen following strict HACCP protocols.
Attention to Detail: High attention to detail in both the preparation and presentation of sushi dishes.
Adaptability: Ability to handle highpressure situations particularly during high season or events without days off.
Customer Focused: Capable of interacting with guests when necessary delivering personalized service.
Language Skills: Fluency in English required; knowledge of German or Italian is a plus but not mandatory.

Accommodation: Private room located 7 minutes from the restaurant at a cost of CHF 600 per month.
Meals Provided: For CHF 220 per month.
Salary: Between CHF 4800 CHF 5500 gross per month with 13 salaries paid annually.
: Tips shared between service and kitchen teams.
WorkLife Balance: Two days off per week (with exceptions during high season).
