I compiti principali : Sotto la responsabilità dello Chef de Partie, assisterai nella preparazione e nella messa in opera ( mise en place ). Svilupperai le tue competenze contribuendo al contempo alla regolarità e alla qualità dei piatti serviti, in conformità con gli standard di Casa Monti. Assicurare la messa in opera della propria postazione. Realizzare con precisione le preparazioni culinarie rispettando le schede tecniche, con una costante attenzione all'eccellenza del prodotto e alla coerenza con l'identità della cucina italiana. Ricevere e verificare la qualità delle consegne. Sostituire lo Chef de Partie in sua assenza. Assicurare l'approvvigionamento per la propria sezione e determinare le necessità di attrezzature. Partecipare agli inventari mensili. Pianificare la produzione in base agli ordini, ai prodotti in stock e alla stagionalità. Mantenere la propria sezione e esserne responsabile. Assicurarsi il rispetto delle norme igieniche vigenti e del costo ( cost ) della propria sezione. Formare i nuovi arrivati, commis, apprendisti e stagisti. L'elenco di queste mansioni non è esaustivo e può cambiare durante l'esecuzione del contratto in base alle esigenze dell'azienda, nel rispetto delle qualifiche del dipendente.
