Offer Description
The research will be carried out at the Department of Agricultural, Food and Forest Sciences at the University of Palermo and at the wineries of the partner organisations in the White Wine Identity project. The programme will focus on the characterisation of winemaking yeasts intended for the production of sparkling wines using the Classic and Charmat methods. Activities will include the assessment of the fermentative performance of the strains used during the refermentation and second fermentation stages, monitoring of the production processes, and the development of innovative sparkling wine production protocols. Particular attention will be paid to characterising the aromatic profile of the wines through analysis of volatile organic compounds, and to assessing the relationships between fermentative activity, aromatic profile and sensory quality. The activities will include the statistical analysis of data and the transfer of findings to the project's partner wineries.
