I compiti principali : Sotto la responsabilità del Sous-Chef, sarai incaricato/a della preparazione e della messa in opera (mise en place) nella tua sezione (pasticceria). Dovrai garantire la qualità delle creazioni e dei dessert secondo gli standard di Casa Monti e partecipare attivamente al buon svolgimento del servizio. Assistere lo Chef e i Sous-Chef nelle loro funzioni. Supervisionare i commis e gli apprendisti della pasticceria. Ripartire i compiti e dare istruzioni ai membri della tua squadra, vigilando sulla loro corretta esecuzione. Contribuire all'animazione e alla formazione della tua squadra. Vigilare sull'efficacia del servizio (in particolare per le colazioni e i dessert). Vigilare sulla corretta esecuzione e preparare le diverse creazioni del menu, padroneggiando perfettamente le tecniche della tradizione pasticcera italiana. Contribuirai a valorizzare la qualità e l'esclusività dei prodotti di stagione. Vigilare sul rispetto delle schede tecniche e controllare la corretta preparazione dei dessert prima dell'invio in sala (gusto, texture, dressage). Controllare tutte le merci consegnate (materie prime, ingredienti sensibili). Assicurare una buona gestione delle scorte e controllare l'approvvigionamento.
