Your Mission:

We are seeking an experienced and innovative Senior R&D Gelato Specialist to join our R&D Team based in Castelletto Stura

Reporting to the Head of Product Development & Raw Materials Purchasing you will lead our gelato category evolution. This role involves advanced product development, participation in strategic supplier management, and comprehensive oversight of our chocolate and gelato product lines. The ideal candidate will possess extensive expertise in recipe development, exceptional organizational skills, and the ability to drive cross-functional collaboration.

Key Responsibilities:

  • Base Preparation Leadership: Oversee the preparation of gelato bases, ensuring adherence to advanced recipes.
  • Strategic Supplier Management: Manage high-level supplier interactions, requests, feedback, and sample logistics.
  • Ingredient Evaluation: Lead the pre-screening and evaluation of technical specifications, collaborating with Quality for ingredient approval.
  • Ingredient Validation: Oversee the assessment and validation of new ingredient substitutions or introductions.
  • International Coordination: Coordinate and provide expert support to foreign units, resolving complex production issues and managing ingredient disposal.
  • Recipe Database Oversight: Ensure the recipe database is comprehensive and up-to-date.
  • Trial Management: Lead trials and meticulously record raw material consumption.
  • Empirical Testing: Oversee calculation tables and develop a strategic approach to empirical tests.
  • Preparation Documentation: Supervise the compilation of preparation sheets and processing videos.
  • Laboratory Maintenance: Ensure the highest standards of cleanliness and order in the laboratory.
  • Innovation Leadership: Drive innovation in gelato product development, leveraging new techniques and ingredients.
  • Cross-Functional Collaboration: Collaborate with marketing, sales, and production teams to align product development with business goals.

  • Extensive experience in the Food & Beverage industry, with a focus on gelato production.
  • Proven organizational and multitasking abilities.
  • Exceptional communication and strategic supplier management skills.
  • Strong critical thinking and problem-solving capabilities.
  • Demonstrated ability to lead and collaborate with cross-functional teams.
  • Passion for product development and innovation.
  • Leadership Experience: Proven track record of leading and mentoring teams.
  • Market Insight: Deep understanding of market trends and consumer preferences in the chocolate and gelato sectors.
