About the Role

We are seeking a highly skilled Pastry Sous Chef to join our pre-opening team at Casa Brera, a luxury lifestyle hotel in Milan. As a key member of our culinary team, you will be responsible for coordinating the pastry team and supporting the Pastry Chef in all pastry operations.

Key Responsibilities
  • Coordinate the pastry team and support the Pastry Chef in all pastry operations.
  • Support and coordinate the brigade during service.
  • Prepare breads and pastries, including preparing doughs and fillings, proofing, baking and decorating as appropriate.
  • Process orders in company systems, maintain relationship with the purchasing department and approved suppliers.
  • Review production sheet to understand variety of goods to be produced daily.
  • Prepare and cook food according to recipes, quality and presentation standards, and food prep checklists.
  • Maintain kitchen logs for food safety program compliance.
  • Keep Pastry Chef informed of excess food items for planning of daily specials.
  • Safely and appropriately use baking and measuring tools/equipment/appliances to prepare baked foods.
  • Check and ensure correct temperatures of kitchen appliances and food, and report issues to management.
  • Monitor the quality of food prepared and portions served throughout the shift.
  • Assist management in training, scheduling, evaluating and motivating employees; serve as a role model.
  • Ensure compliance with safety training and certifications.
  • Follow Standard Operating Procedures and brand identity guidelines.
  • Comply with quality assurance expectations and standards.
  • Comply with all health, safety and hygiene standards and policies.
Requirements
  • Possession of a passion for the luxury lifestyle hospitality and the culinary industry.

  • Positive outlook and dependability.
  • Previous experience in similar roles is an advantage.
