The project will investigate the economic, behavioural and social determinants of decision-making in agri-food systems, focusing on food purchasing, consumption and management. The research will examine the role of preferences, habits, social norms, information and food environments, exploring willingness to pay for quality and sustainability attributes, preference heterogeneity, and the gap between stated intentions and actual behaviour. The analysis may extend to farmers’ decisions, including production choices, adoption of sustainable practices and responses to economic and institutional incentives. The project will identify factors enabling or hindering the transition towards sustainable food systems, providing evidence to inform effective policies and interventions.
