Offer Description

The research activities will be carried out at the Department of Agricultural, Food and Forest Sciences of the University of Palermo and at the wineries of the partners involved in the "White Wine Identity" project. The program will focus on evaluating the use of non-Saccharomyces yeasts selected to enhance the aromatic quality and sustainability of white wines. Activities will include validation of innovative fermentation protocols, monitoring of fermentation processes, and characterization of the volatile and metabolic profiles (volatilome and metabolome) of musts and wines using chromatographic and spectrometric techniques. Analyses will be conducted to identify relationships between the metabolic activity of non-Saccharomyces yeasts, chemical composition, and the sensory quality of the wines. These trials will be conducted within must clarification using Dynamos Padoan technology at the Settesoli winery, the lead partner of the supply chain project.
