We are seeking a passionate and service-driven Restaurant Manager to support the daily operations of our restaurant, nestled in the heart of the Tuscan countryside at Tenuta Toscana.

The ideal candidate will embody elegance, professionalism, and a deep understanding of luxury hospitality, ensuring a refined and memorable dining experience for our discerning international clientele, while celebrating the authentic flavours and warmth of Tuscan cuisine.

This position will report directly to the F&B Operations Manager, collaborating closely to maintain the highest standards of service and operational efficiency.

Main duties and responsibilities

  • Manage and execute service within the assigned section to oversee the service delivery in the assigned section, ensuring a flawless, personalized, and memorable experience for each guest, adhering to the highest standards of hospitality and refinement.
  • Uphold the service philosophy of Tenuta Toscana by providing tailored recommendations and anticipating guest preferences, offering proactive, intuitive service to exceed expectations.
  • Coordinate with the culinary team to ensure that each course is delivered at the perfect temperature and presented impeccably, creating a seamless flow between kitchen and dining room.
  • Enhance the guest experience by offering expert wine pairings and insight into local Tuscan wines, engaging guests in a sophisticated yet relaxed conversation about the origins and characteristics of the selections.
  • Maintain the elegance of the dining environment by ensuring immaculate table settings, proper lighting, and a harmonious atmosphere that reflects the brand’s luxurious identity.
  • Lead by example, guiding junior team members and commis with professionalism and grace, ensuring adherence to service standards, operational efficiency, and harmonious teamwork.
  • Mentor new staff, offering hands‑on support and encouraging the development of service skills, product knowledge, and attentiveness to detail.
  • Assist in preparing shift schedules, adjusting staffing levels to meet operational demands, and ensuring optimal service during peak and off‑peak hours.
  • Ensure the careful handling, maintenance, and proper use of all restaurant equipment, adhering to operational protocols and maintaining a pristine and well‑organized environment.
  • Follow and enforce the HACCP guidelines and internal health and safety standards rigorously, conducting regular checks to ensure compliance and minimizing risks to both guests and staff.
  • Drive the financial performance of the restaurant by upselling signature dishes and wines, while also maintaining cost control through waste reduction and portion management.
  • Foster a collaborative environment by promoting a culture of respect, excellence, and continuous improvement, ensuring a team‑oriented approach to service.
  • Exemplify professionalism and discretion in all guest interactions, consistently delivering superior service with attention to detail and a warm, welcoming demeanor.
  • Promote the values of Tenuta Toscana by upholding the highest ethical standards, ensuring that all guests are treated with respect and care, while fostering a team culture of mutual support and integrity.
  • Maintain the utmost confidentiality in all aspects of the role, including guest preferences, team matters, and any proprietary information regarding the operations of the resort and restaurant.

Requirements

  • Minimum of 3 years in a management role within a luxury hospitality or dining environment, preferably in a 5-star resort or hotel.
  • A degree in Hospitality Management or a related field is appreciated.
  • Proven experience in leading and motivating a team to deliver exceptional service in a high‑pressure environment.
  • A passion for providing superior guest experiences with an attention to detail and the ability to anticipate guests’ needs.
  • In‑depth understanding of dining and wine pairings. Experience with local Tuscan cuisine and wines is highly desirable.
  • Strong interpersonal and communication skills, both verbal and written, in English and Italian. A third language would be considered a plus.
  • Ability to handle challenging situations with a calm and professional demeanour, ensuring guest satisfaction at all times.
  • Exceptional time management and organizational skills with the ability to manage multiple tasks simultaneously.
  • Willingness to work varied shifts, including evenings, weekends, and holidays as required in the hospitality industry.
