About the Role

Villanova University is seeking a highly skilled and experienced Executive Chef to join our team in the Dining Services Operations department. As a key member of our management team, the Executive Chef will be responsible for overseeing the culinary operations of our residential dining hall, catering services, and commissary production.

Key Responsibilities
  • Leadership and Management
    • Supervise and coordinate food production to ensure high-quality dishes are served to our students, faculty, and staff.
    • Assist the management team with front-of-house operations, including cash handling, staffing, and inventory management.
    • Develop and implement menu planning, food production, and portioning strategies to control food costs and improve customer satisfaction.
  • Food Safety and Sanitation
    • Ensure the highest standards of sanitation and kitchen safety are maintained at all times.
    • Maintain and improve the cleanliness and food quality levels in all outlets of the operation.
  • Training and Development
    • Train, develop, and direct staff using approved management practices.
    • Review work processes and food preparation methods to improve service, performance, and safety.
  • Menu Planning and Recipe Development
    • Plan and participate in menu planning and recipe development for all outlets, including catering.
    • Incorporate the latest market and nutritional trends into menu offerings.
  • Financial Management
    • Generate maximum financial performance through effective cost control management.
    • Accountable for recipe specifications and food cost controls.
  • Special Events and Projects
    • Assist in the planning and coordinating of special events and projects.
    • Perform other duties and assist with projects as assigned.
Requirements
  • Education and Experience
    • 2-year certificate from an accredited Culinary Arts Program or Associate Degree in Hotel and Restaurant Administration or commensurate work experience.
    • 5 years total food service cooking experience, preferably a combination of institutional and restaurant service with progressive responsibilities.
  • Skills and Qualifications
    • Extensive knowledge of Food Safety and Sanitation, advanced food preparation and production, ordering, and inventory controls.
    • Excellent written and oral communication skills.
    • Able to work with a diverse workforce and interact with people on a constant basis.
    • Ability to work independently and with minimal supervision.
    • Basic computer skills.
  • Physical Requirements
    • Some exposure to cleaning chemicals and ability to withstand refrigerator and freezer conditions.
    • Ability to lift up to 50 pounds and stand for periods of up to 4 hours in a fast-paced environment.
