About the role
Four Seasons Hotel Firenze is seeking a dedicated Culinary Assistant to join the Kitchen Team. The Culinary Assistant prepares food items for breakfast, lunch, and dinner based on guest orders while adhering to production requirements and quality standards, all while maintaining a safe and sanitary work environment.

Responsibilities

- Prepare food items according to guest orders with consistent quality, following recipe cards, production, portion, and presentation standards; complete mise en place and set up the station for service.
- Initiate food items that are prepared in advance, ensuring not to exceed estimated needs.
- Operate, maintain, and properly clean kitchen equipment, including deep fryers, broilers, stoves, steamers, food processors, mixers, slicers, ovens, steam tables, tilt kettles, waffle irons, and flat top grills.
- Label all food containers and rotate items according to policies, ensuring all perishables are stored at appropriate temperatures; check pars for shift use, determine necessary preparation, freezer pulls, and line setup; note any out-of-stock items or potential shortages.
- Return all unused food items to designated storage areas, ensuring to cover and date all perishables; assist in developing plans and actions to address any food cost issues; manage food waste, loss, and usage in accordance with policies.

Qualifications

- Minimum culinary experience is expected.
- Proficient knife skills and the ability to multitask are essential.
- Reading, writing, and oral proficiency in the Italian language is required; English is a plus.

Schedule & Hours:

• This position is based at the Four Seasons Hotel Firenze and is a full-time, seasonal contract. Legal work authorization for the location is required at the time of application.
