Casa Brera, a Luxury Collection Hotel belonging to Marriott International, is currently recruiting a Director of Food and Beverage.

Reporting to the General Manager, the Director of Food and Beverage will be in charge of both F&B and Culinary departments.

The role is both operational and strategic. We are looking for someone who loves being highly involved in the day to day operations, who focuses on standards and procedures and who is engaged with the team training and development.

The starting date is as soon as possible.

As part of this foundation, you will lead a concept and create unique guest experiences that draw hotel guests and patrons from the surrounding community. You’ll work closely with a team of inspiring professionals and mentor F&B enthusiastic and passionate team members, setting the standard for the highest luxury service, creatively positioning the outlet in the local market, and driving topline and customer growth.

**What you’ll do**

The role functions as the strategic business leader of the property’s food and beverage/culinary operation, including Restaurants/Bars, Room Service and Events.

The main responsibilities of the F&B Director are:

- oversees the development and implementation of departmental strategies and ensures implementation of the brand service strategy and brand initiatives.
- ensures the food and beverage/culinary operation meets the brand’s target customer needs, ensures employee satisfaction, and focuses on growing revenues and maximizing the financial performance of the department.
- Develops and implements property-wide strategies that deliver products and services to meet or exceed the needs and expectations of the brand’s target customer and property employees and provides a return on investment.

- Sets expectations and holds F&B and Culinary leadership teams accountable for demonstrating desired service behaviors.
- Reviews financial reports and statements to determine how Food and Beverage is performing against budget.
- Makes recommendations for CAPEX funding of F&B and Culinary equipment and renovations in accordance with brand and business strategy.
- Works with F&B and Culinary leadership team to determine areas of concern and develops strategies to improve the department’s financial performance.
- Establishes challenging, realistic and obtainable goals to guide operation and performance.
- Strives to improve performance.

**Developing and Maintaining Budgets**
- Develops and manages F&B and Culinary budget.
- Monitors the departments’ actual and projected sales to ensure revenue goals are met or exceeded and opportunities are identified and addressed.
- Ensures cost controls policies are in place in F&B and Culinary areas and followed by all related employees.
- Focuses on maintaining profit margins without compromising guest or employee satisfaction.
