**JOB SUMMARY**
The Director, Global Luxury Food & Beverage (F&B), Bulgari Hotels and Resorts (BHR) is a key contributor to the global food and beverage operation and direction for BHR. This position is responsible for overseeing BHR’s existing F&B concepts and elevating the food and beverage operations through the creation of new concepts. The position works across BHR, Luxury F&B, continent operations, retained consultants and other related disciplines to improve overall guest experience, consistency, and alignment. Food and Beverage and in particular restaurants and bars are critical to continuing to position Bulgari as the preeminent luxury brand in hospitality and a showcase for the Bulgari brand globally.
**CANDIDATE PROFILE**
**Education and Experience Required**
- 4-year degree from an accredited university in Business Administration, Hospitality, Culinary or related role.
- 10+ years of hospitality operations and/or F&B experience, demonstrating progressive career growth and a pattern of exceptional performance.
- Proven ability to lead and work with cross-functional teams, using data and insights to influence decision-making.
- Sensitivity to global communication needs
- Experience introducing and implementing creative concepts and ideas, as well as concept through final delivery in the F&B space.
**Education and Experience Preferred**
- Prior experience in regional, corporate, or multi-unit restaurant and bar operations
- Ability to lead in a matrix organization; leverage matrixed resources.
- Possess excellent project management and change management skills.
- Ability to independently manage multiple projects and competing priorities; proven success prioritizing and managing multiple projects and stakeholders simultaneously.
**CORE WORK ACTIVITIES**
**Restaurant and Bar Operations**
- Monitor F&B menus and beverage lists across the BHR portfolio to ensure consistency where necessary.
- Regularly review and update F&B related Operating Supplies & Equipment, collaborating between properties, suppliers, and procurement, and communicate to appropriate stakeholders (GM’s, F&B leaders, brand leaders and brand operations) through Marriott’s internal channels.
- Regularly review and update F&B related Standard Operating Procedures to ensure adherence to high-quality standards in food preparation, presentation, and service, to maintain consistency and quality across all outlets.
- Manage Niko Romito concepts, including meeting quarterly with Niko Romito to discuss menu changes, collecting and reviewing Menu Engineering reports monthly to elevate and experience and drive sales.
- Provide guidance to Bulgari and the legal team in drafting F&B related brand partnership agreements (e.g., Niko Romito, Gianluca Fusto (Chocolate), Pier Daniele Seu (Pizza), etc.).
- Plan F&B initiatives and events with the properties and operations brand team to create integrated guest experiences and events.
- Coordinate between brand partners and properties (e.g., Podernuovo wines, Carma Olive Oil, wine list section for the “Women of Bio”, etc.) to drive consistent execution of product and experience amongst the Bulgari portfolio.
- Ensure proper staffing levels are maintained across the portfolio F&B operation by monitoring talent and openings across the portfolio and assisting with identifying new talent.
- Coordinate with Tokyo Restaurants and with our Consultant Maître Chocolatier, the new recipes, and all related seasonal and festive initiatives for all BHR properties to drive consistency and elevation of experience.
- Oversee production of special packaging and brochures.
- Conduct calls with F&B leaders and other stakeholders to drive standards, experience, and programming.
- Work with F&B marketing in continents and at HQ to drive awards and recognition to support sales growth and PR.
**Openings**
- Work closely with the Bulgari team and other stakeholders (e.g., feasibility team, architects, kitchen consultants, A&C team, and partners) to establish the F&B facilities criteria on new projects and design of new facilities.
- Coordinate directly with continent opening teams on countdown, pre-opening, and program development for F&B.
- Support the development, preparation and deployment of beverage programs.
- Assist with the development, preparation and deployment of F&B materials, presenta Experience introducing and implementing creative concepts and ideas, as well as concept through final delivery in the F&B space tions and pre-opening training programs.
- Provide post-opening support.
- Collaborate with Bulgari and property GM to define initial manning.
