Job DescriptionAt Collegio alla Querce, Auberge Collection, food and beverage is an essential part of how guests experience the hotel - thoughtful, generous and grounded in quality.
The Assistant Director of Food & Beverage plays a key role in shaping this experience on the floor, leading daily operations with presence, consistency and care.The role oversees daily floor operations, maintains a deep knowledge of menu offerings and quality standards, and supports the team through guidance, presence and example. With an eye for detail and a genuine passion for refinement, this role contributes to consolidating and further elevating the hotel's reputation around food and beverage, ensuring each service is delivered with consistency, intention and a sense of ease. This position is suited to someone who takes pride in excellence on the floor and understands that memorable experiences are built through people, precision and care.
Assistant Director of Food & Beverage
Plans all aspects of service delivery and execution. Works directly with the Executive Chef in the preparation of menus, cost control, price point, and successful selling of dishes. Seeks out innovative methods to develop new cuisine and service standards for the restaurants
Conducts ongoing training sessions with management personnel to increase their knowledge and capabilities in the food service area. Coordinates weekly meetings with the team to facilitate communication, goal setting, and attainment
Selects, trains, schedules, supervises, counsels, and handles administrative functions of managers per established standards for hotel policy, safety, productivity, and performance Works through managers to administer disciplinary action and labor relation issues
Assists managers in ensuring timely and consistent execution of food and beverage service May be called upon to handle guest complaints; ensure guest satisfaction
Ensure the highest level of guest service is consistently delivered in restaurant and bar areas Monitor house count, arrivals/departures, VIPs, handling all guest complaints to ensure satisfaction
Coordinates the completion of labor reports, weekly schedules, etc. to ensure obligations are met. Creates and adheres to budgetary requirements
Oversees the cost control and storeroom function of the hotel
Act as a brand ambassador for Collegio alla Querce, Auberge Collection, embodying the brand's values through leadership, presence on the floor and a commitment to team engagement, fostering a culture of pride, consistency and genuine care.
A minimum of four years experience in the same role within a luxury hospitality environment is required
Strong understanding of food and beverage operations and commitment to elevating product and service
Knowledge of the market trends in the food and beverage industry
A strategic and innovative yet hands-on approach to food and beverage operations
Ability to inspire, empower, retain and develop the team
