Tenuta Toscana is searching for a SOUS CHEF Tenuta Toscana, a prestigious new estate in the heart of the Tuscan countryside is seeking a highly experienced and committed Sous Chef to support the Head Chef in overseeing the resort’s kitchen operations. This role is ideal for a senior culinary professional with extensive experience in luxury hospitality. Reporting to the Head Chef, the Sous Chef will manage daily operations of the restaurant kitchen while gradually assuming responsibility for additional culinary outlets as new dining concepts are developed across the estate. A deep passion for Italian cuisine, strong team leadership, and a commitment to culinary excellence are essential. Main duties and responsibilities Ensure the consistent delivery of outstanding food quality, presentation, and taste in alignment with Tenuta Toscana’s gourmet choices and luxury standards Support the creation of menus that highlight local, seasonal ingredients and celebrate Mediterranean and Tuscan culinary traditions with refined execution Guarantee a smooth and harmonious flow between kitchen and service teams, ensuring every guest enjoys a memorable dining experience Demonstrate an exceptional eye for detail and a commitment to exceeding guest expectations at every service Collaborate closely with the Director of Culinary on all aspects of menu creation, planning, staffing, sourcing, and quality control Supervise daily kitchen operations and act as the second-in-command, stepping in when the Director is unavailable Take an active role in strategic culinary development as new restaurants and outlets open across the estate Support administrative and operational tasks such as rota scheduling, purchasing, stock control, and team performance reviews Develop, document, and monitor recipes, ensuring consistency in flavour, presentation, and portioning across all service periods, while supporting kitchen training and maintaining high culinary standards as new outlets and menus are introduced. Ensure and maintain the highest standards of hygiene and safety by rigorously enforcing HACCP procedures and internal protocols Monitor and optimize kitchen efficiency, ensuring proper use and maintenance of all culinary equipment Contribute to financial performance through effective cost control, waste reduction, and portion management Ensure all culinary operations are carried out in a timely, organized, and professional manner, even during high-volume service Upon request, work in private residences within Tenuta Toscana, preparing personalized meals for the owners and their guests Lead and inspire the kitchen brigade by setting a strong example in professionalism, culinary skills, and work ethic Promote a positive, respectful, and disciplined work culture rooted in teamwork, excellence, and continuous development Provide on-the-job training and mentorship to junior chefs, helping to grow internal talent and foster retention Represent the culinary team with integrity, confidentiality, and commitment to Tenuta Toscana’s values Requirements Minimum of 8 years’ experience in high-end culinary environments, with at least 3 years in a leadership role Proven experience in 5-star luxury resorts or international fine hospitality settings is essential Strong knowledge of Italian and Mediterranean cuisine, with a deep passion for Tuscan culinary traditions In-depth understanding of kitchen operations, food safety, cost control, and service flow Fluent in English and Italian. A third language will be an advantage Proven ability to lead, motivate, and manage a team to deliver exceptional service in high-pressure environments, with strong communication, organizational, and team management skills Ability to work under pressure while maintaining calm, quality, and consistency, with flexibility to work evenings, weekends, and holidays as required Exceptional time management and organizational skills, with the ability to manage multiple tasks simultaneously Familiarity with culinary management software and general computer programs Impeccable grooming and a professional appearance consistent with a luxury 5-star environment Benefits Full-time contract in accordance with the Italian Collective Bargaining Agreement (CCNL) Meals provided both during working hours and on days off Uniforms and laundry service provided Ongoing training to enhance personal and professional development Access to exclusive events for Castelfalfi team members Discounts on dining, wellness, and sports activities available at the resort and estate Accommodation with free Wi-Fi can be arranged upon request for those coming from outside the area This research is addressed to candidates of both genders with reference to Italian Law 903/77 and Law 125/91.
