About the Role:

The Luxury Pastry Culinary Expert will be responsible for coordinating the pastry team and supporting the Pastry Chef in all pastry operations. This will include coordinating the brigade during service, preparing breads and pastries, processing orders, and maintaining kitchen logs for food safety program compliance.

Key Responsibilities:

  • Coordinate the pastry team and support the Pastry Chef in all pastry operations.
  • Support and coordinate the brigade during service.
  • Prepare breads and pastries, including preparing doughs and fillings, proofing, baking, and decorating as appropriate.
  • Process orders in company systems and maintain relationships with approved suppliers.
  • Review production sheets to understand the variety of goods to be produced daily.
  • Prepare and cook food according to recipes, quality, and presentation standards, and food prep checklists.
  • Maintain kitchen logs for food safety program compliance.
  • Keep the Pastry Chef informed of excess food items for planning of daily specials.
  • Safely and appropriately use baking and measuring tools/equipment/appliances to prepare baked foods.
  • Check and ensure correct temperatures of kitchen appliances and food, and report issues to management.
  • Monitor the quality of food prepared and portions served throughout the shift.
  • Assist management in training, scheduling, evaluating, and motivating employees; serve as a role model.
  • Ensure compliance with safety training and certifications.
  • Follow Standard Operating Procedures and brand identity guidelines.
  • Comply with quality assurance expectations and standards.
  • Comply with all health, safety, and hygiene standards and policies.
