Main Purpose

The F&B Manager is responsible for the overall F&B division, encompassing Restaurants, Bars, In Room Dining, Banqueting, and any F&B activity related to The Carlton, Milan. This role requires maintaining and consolidating the exceptional service standards of the F&B Division for our Guests in compliance with Rocco Forte Hotels quality standards and procedures.

Key Responsibilities
  • Effective management and standards delivery for the F&B Division (Breakfast Lounge, Restaurant, Bars, and In Room Dining departments).
  • Responsible for selection, appraisal, and professional training and development of the F&B Division department staff.
  • Ensuring that Guests are greeted in a warm and professional manner, in accordance with Rocco Forte Hotels standards.
  • Developing an operating budget for the F&B Division revenue, costs, staffing, and necessary equipment, monitoring, and taking corrective actions to ensure budgeted sales and cost goals are attained.
  • Ensuring adequate cash procedures are followed and that documentation is reported in an accurate and timely manner, including Guest check analysis, ticket controls, and daily sales reports and analysis.
  • Assisting the Hotel Manager in ensuring compliance with health and safety regulations in the F&B Division, together with the Executive Chef.
  • Developing and implementing innovative strategies to improve the Guest experience.
  • Assisting the Hotel Manager and the General Manager with special projects (e.g., weddings, conferences, and partnerships).
  • Developing and implementing strategies based on a deep understanding of competitor benchmarks and market trends.
  • Cooperating with all other Managers to achieve Hotel goals and provide the best personalized experience to our Guests.

Other Requirements
  • Professional experience, preferably at an international level, in the same role for at least three years.
  • Italian and English knowledge at Advanced level. Third language preferred.
  • Excellent knowledge of all aspects of F&B Operations, including Restaurant and Bar Management, Banqueting, In Room Dining, Culinary, and Stewarding.
  • Experience in quality-driven projects.
  • Familiarity with F&B Management systems.
