About the Role

We are seeking a highly skilled and experienced Executive Assistant Manager to lead our Food and Beverage (F&B) operations at Belmond Castello di Casole. As a key member of our leadership team, you will be responsible for overseeing the implementation of our F&B strategic goals, managing day-to-day operations, and enhancing the quality of our food and beverage services.

Key Responsibilities
  • Ensure exceptional food and beverage quality and service in all restaurants, bars, IRD, banqueting, and staff dining areas.
  • Embed Belmond values and promote a fair, safe, and inclusive environment, leading initiatives that engage and empower the team.
  • Work closely with the Earth-Check team to strategize and support the development and positioning of Belmond for all aspects of Environmental, Social, and Governance (ESG).
  • Drive revenues through strategic management of commercial initiatives with the leadership team.
  • Have a firm grip on the Profit and Loss (P&L) and take ownership of costs, always striving to find efficient solutions while maintaining high quality and exceptional guest experience.
  • Work closely with the Executive Chef on menu development and ensure food quality and consistency.
  • Lead from the front and be a role model for the team, with a strong presence that is felt by both guests and colleagues.
  • Hire, retain, and develop unique, high-caliber talents that positively contribute to the hotel's goals.
Requirements
  • A track record of leading teams in restaurants, kitchens, bars, and banqueting, with a natural ability to inspire trust and bring others along on a journey.
  • Proven experience in a similar F&B management or director role, either across multiple sites.
  • Fluent English, Italian (and possibly French) are necessary.
  • Multi-departmental budgeting and forecasting experience, with a clear understanding of financial expectations for a successful restaurant and bar business.
  • An ability to manage the budget on a daily, weekly, and monthly basis, with a granular understanding of ongoing trends.
  • Exceptional attention to detail in an environment that focuses on driving excellence.
  • A passion for hospitality, with a focus on creating memorable experiences for guests and colleagues.
  • A willingness to challenge the norm and try new approaches.
