Purpose
Collaborate closely with the Food and Beverage Team at the Support Office to define the strategic direction for food and beverage within citizenM, tailoring this vision to the local context. You will assist hotel managers in executing F&B strategies at their respective locations, enhancing guest experiences while optimizing gross profit. Working in conjunction with the F&B Support Team, you will manage product sourcing, local pricing strategies, and the training and development of hotel teams in all aspects of food and beverage, establishing robust partnerships with local suppliers. You will consistently ensure the maintenance of food and beverage operational equipment and adherence to citizenM's Food Safety Policy and HACCP standards to create a safe environment for employees, contractors, and guests alike.

Key Responsibilities

Ensure the highest quality of food and beverage offerings at citizenM.
Build and nurture strong relationships with local influencers and suppliers.
Oversee the seasonal evolution of the food and beverage offerings, implementing two major updates annually to reflect spring/summer and autumn/winter themes.
Deliver practical training for both new and existing team members across all shifts, focusing on key items such as coffee, wine, spirits, cocktails, and beer.
Mentor and support skill development for champions within your area.
Provide comprehensive training on all food and beverage-related equipment.
Equip food ambassadors in each hotel with the skills to prepare and present food items according to established standards.
Train assistant hotel managers to ensure they can effectively manage ordering, invoicing, and the smooth operation of food and beverage services.
Collaborate with citizenM's health and safety partner to ensure compliance with local food safety regulations, including adherence to HACCP policies.
Actively seek opportunities to demonstrate a commitment to sustainability in food and beverage operations by adopting intelligent procurement practices, minimizing waste, and striving for zero non-recyclable items.
Establish and maintain an inventory management and ordering system at the product level, enabling assistant hotel managers to efficiently place orders with suppliers.
Support the month-end closure, inventory processes, and audits of hotel teams.
Collaborate with Area Managers and hotel managers to develop annual budgets for food and beverage revenue and cost of sales for each property.
Hold hotel managers accountable for delivering the F&B strategy, ensuring quality and standards are met, and create action plans to support them.
Develop performance overviews and plans to assist hotels in achieving revenue, COGS, margin, and optimized operational processes.
Work with hotel managers to ensure monthly revenue targets are achieved through the availability of quality products and comprehensive team training for service delivery across all outlets.
Collaborate with the F&B support team and hotel managers to maintain costs in line with budget through effective menu engineering, smart ordering, and accurate consumption tracking.
Ensure all food and beverage-related materials are current, accurately priced, and aligned with brand standards.
Support brand and commercial initiatives.
Maintain and enhance relationships with existing suppliers, reviewing conditions quarterly to ensure mutual satisfaction and growth (quality, delivery, performance accuracy).
Adapt the cloudM strategy to the local market.
Work with the F&B support team to ensure they have essential operational information to develop effective strategies and support hotel openings in your region, from six months prior to post-opening market support.

Qualifications / Skills

A passion for food and beverage.
Experience in contemporary food service environments.
Relevant professional experience, ideally with a hospitality and food service diploma.
Innovative thinker with strong negotiation skills and attention to detail.
Proficient in Excel, Word, and menu engineering.
Experience in budgeting and cost management.
Proven track record in supplier management and performance evaluation.
Familiarity with finance and budgeting software.
Experience in training, both hard and soft skills, with a pedagogical approach.
Knowledge of country-specific food safety regulations.
Collaborative, creative, and contemporary mindset.
Fluent in verbal and written English; proficiency in French and Italian is a plus.
Eligibility to work in Italy.
Self-sufficient, autonomous, and proactive.
Ability to provide constructive feedback to hotel teams, including Support, hotel managers, and Area managers.

Locations

This role will be based in Rome, covering all properties in Switzerland and Italy, with occasional travel to the Netherlands support office and other locations.
