Coordinamento operativo: Supervisiona l’intero servizio cucina, dalla preparazione alla presentazione dei piatti. Assegna i compiti giornalieri alle partite e garantisce la linea pronta in orario. 2. Progettazione e aggiornamento menu: Collabora alla creazione e revisione del menu, piatti del giorno e menu per gruppi. Cura la stagionalità e la coerenza con lo stile del locale. 3. Controllo qualità e food cost: Garantisce gli standard di qualità, porzioni e presentazione. Controlla costi, sprechi e porzioni, collaborando con la proprietà sul food cost. 4. Ordini e gestione magazzino: Monitora scorte e ordina ingredienti freschi e di qualità. Tiene aggiornato l’inventario, segnala prodotti critici o in esubero. 5. Formazione e gestione brigata: Forma e motiva i cuochi e aiuti cuochi. Propone cambi o inserimenti di personale quando necessario. 6. Sicurezza e igiene: Garantisce il rispetto delle norme HACCP e di pulizia giornaliera della cucina. 7. Sede lavorativo: Roma, San Giovanni
