Job title: Commis Pastry

Direct Reports: Executive Chef

Overall Job Purpose

Il Commis Pastry si occuperà della preparazione delle basi (impasti, creme, salse), della pesatura precisa degli ingredienti e dell'organizzazione della linea. È una figura dinamica che garantisce la pulizia del laboratorio e il supporto tecnico durante la creazione e il decoro dei dolci, con l'obiettivo di imparare le tecniche professionali del mestiere

Competenze

· Conoscenza delle basi: Saper preparare le lavorazioni fondamentali (pasta frolla, pan di spagna, crema pasticcera, meringhe).

· Tecnica di pesatura: Precisione assoluta nell'uso della bilancia e nel rispetto delle dosi

· Manualità: Buona coordinazione per il taglio della frutta, il dosaggio con la sac-à-poche e la decorazione base.

· Precisione e Ordine: Capacità di lavorare in modo pulito e organizzato anche sotto pressione

· Spirito di squadra: Propensione ad aiutare i colleghi per il raggiungimento dell'obiettivo comune.

· Norme HACCP: Conoscenza delle regole di igiene alimentare, etichettatura e conservazione dei prodotti.

Qualifications, Skills & Experience

· Mise en place: Capacità di organizzare autonomamente postazione, pesi e ingredienti.

· Basi della Pasticceria: Padronanza di creme (inglese, pasticcera, ganache) e impasti base (frolla, sfoglia, masse montate).

· Utilizzo Attrezzature: Uso corretto di planetarie, forni statici/ventilati, abbattitori di temperatura e termometri.

· Gestione dello stress: Capacità di mantenere la calma durante la preparazione della linea o nei momenti di picco.

Candidate profile

Education and Experience

· Diploma alberghiero o qualifica professionale in Pasticceria

· Certificazioni Professionali: Attestati di corsi di specializzazione presso scuole di cucina riconosciute (es. ALMA, CAST Alimenti o simili).

· Certificazione HACCP: Obbligatoria e in corso di validità per la manipolazione di alimenti.
