At Thompson Rome by Hyatt , we are seeking a knowledgeable and passionate Sommelier to curate exceptional wine experiences and elevate our Food & Beverage offering.This role is ideal for a wine professional with strong technical expertise, a guest-centric mindset, and the ability to inspire both guests and colleagues through knowledge, storytelling, and refined service.Key ResponsibilitiesWine Program ManagementDevelop and maintain the hotel's wine list, ensuring a diverse and well-balanced selection aligned with the restaurant's menuSource, purchase, and manage wine inventory while maintaining optimal stock levelsBuild and maintain strong relationships with wine vendors, distributors, and wineriesEnsure proper storage, cellaring, handling, and serving standards for all winesMonitor wine costs and pricing strategies to support profitabilityGuest Experience & ServiceProvide expert wine recommendations and food pairings, enhancing the guest dining experienceEngage with guests through knowledgeable and approachable conversation, creating memorable wine experiencesConduct wine tastings and special wine-pairing eventsEnsure refined presentation and exceptional service standards across all outletsStaff Training & DevelopmentTrain front-of-house teams on wine knowledge, service techniques, and pairing recommendationsLead educational tastings and training sessions for the restaurant teamDevelop wine service protocols and ensure compliance with industry standardsCompliance & Quality ControlEnsure compliance with all local and national alcohol laws and regulationsMaintain high standards of wine presentation, service quality, and guest experienceStay up to date with wine trends, emerging regions, and industry best practicesMain DutiesServe all beverage orders professionally, using correct equipment and proceduresTake beverage orders and apply upselling techniques when appropriateRecommend wines based on guest preferences and menu selectionsEnsure wine lists are updated and sales records are accurately maintainedControl stock levels of wines and beveragesSupport food service operations when requiredCandidate ProfileCertification from a recognized wine institution (WSET, AIS, Court of Master Sommeliers, or equivalent)Previous experience as a Sommelier in a luxury hotel or fine dining environmentStrong knowledge of wines, spirits, and food pairingsExcellent communication, interpersonal, and sales skillsAbility to upsell while enhancing guest satisfactionFluent in Italian and EnglishWillingness to learn and ability to perform under pressureStrong initiative and a service-driven attitudeWhat You Will DoReporting to the Director of Operations , you will support all Food & Beverage outlets with passion and creativity. You will work closely with the F&B leadership team to manage wine lists, recommend food and wine pairings, assist waiters and the Sommelier team with service preparation, oversee glassware par stock, manage inventory, and remain highly visible in operations to ensure an attentive and distinctive guest experience.
