L'inserimento avverrà in un contesto strutturato e di alto livello.Orario di lavoro: full time 40 ore settimanali su turni (pranzo e cena), da lunedì a domenica con riposi a rotazione.Luogo di lavoro: Milano (Centro).Di cosa ti occuperai?A diretto riporto dell'Executive Chef, sarai il punto di riferimento operativo per la brigata. Nello specifico ti occuperai di:supportare l'Executive Chef nella creazione dei menu (à la carte e banqueting) e nella gestione operativa della cucina;coordinare e supervisionare la brigata di cucina durante il servizio, garantendo standard qualitativi elevati;sostituire l'Executive Chef in sua assenza, assicurando la continuità del servizio;gestire gli ordini, le scorte e monitorare il food cost nel rispetto del budget assegnato;garantire il rigoroso rispetto delle normative igienico-sanitarie (HACCP) e delle procedure di sicurezza;formare e motivare il personale più junior (commis e demi-chef), favorendo un clima di lavoro positivo.Quali requisiti stiamo cercando?Diploma di scuola alberghiera o formazione equipollente;esperienza pregressa di almeno 3/4 anni nel ruolo di Sous Chef o Senior Chef de Partie in Hotel 4/5 stelle o ristoranti di livello;ottima conoscenza delle tecniche di cucina moderna, sia per servizio à la carte che per eventi/banchettistica;comprovata capacità di gestione del team e leadership;conoscenza delle normative HACCP e gestione scarti/food cost;flessibilità oraria e resistenza allo stress.Completano il profilo: passione per il settore, doti relazionali, precisione, pulizia e attitudine al problem solving.La ricerca è rivolta ai candidati ambosessi (L.******).
