Pastry Sous Chef

Are you a skilled pastry professional looking for a new challenge? We are seeking a Pastry Sous Chef to join our team at a luxury hotel in Milan. As a Pastry Sous Chef, you will be responsible for coordinating the pastry team and supporting the Pastry Chef in all pastry operations.
Key Responsibilities:
- Coordinate the pastry team and support the Pastry Chef in all pastry operations.
- Support and coordinate the brigade during service.
- Prepare breads and pastries, including preparing doughs and fillings, proofing, baking and decorating as appropriate.
- Process orders in company systems, maintain relationship with the purchasing department and approved suppliers.
- Review production sheet to understand variety of goods to be produced daily.
- Prepare and cook food according to recipes, quality and presentation standards, and food prep checklists.
- Maintain kitchen logs for food safety program compliance.
- Keep Pastry Chef informed of excess food items for planning of daily specials.
- Safely and appropriately use baking and measuring tools/equipment/appliances to prepare baked foods.
- Check and ensure correct temperatures of kitchen appliances and food, and report issues to management.
- Monitor the quality of food prepared and portions served throughout the shift.
- Assist management in training, scheduling, evaluating and motivating employees; serve as a role model.
- Ensure compliance with safety training and certifications.
- Follow Standard Operating Procedures and brand identity guidelines.
- Comply with quality assurance expectations and standards.
- Comply with all health, safety and hygiene standards and policies.
Requirements:
- Possession of a warm, people-oriented demeanor and a team-player attitude.

- Positive outlook and dependability.
- Previous experience in similar roles is an advantage.
