About the Role

As part of the esteemed Luxury Group of Marriott International, we are seeking skilled Pastry Sous Chefs to be integral members of our pre-opening culinary team, composed of dedicated hospitality professionals.

Reporting directly to the Pastry Chef, you will play a crucial role in overseeing the pastry brigade, ensuring smooth operations and high-quality standards.

This is a full-time position, requiring a commitment of 5 days a week with 2 days off.

Responsibilities

  • Oversee the pastry team and assist the Pastry Chef in all aspects of pastry production.
  • Support and manage the brigade during service periods.
  • Prepare a variety of baked goods, including doughs, fillings, and decorative elements.
  • Maintain effective communication with the purchasing department and approved suppliers.
  • Review daily production requirements to ensure a diverse range of goods is prepared.
  • Adhere to recipes and presentation standards while preparing and cooking food.
  • Maintain kitchen logs to ensure compliance with food safety protocols.
  • Inform the Pastry Chef of surplus food items for daily special planning.
  • Utilize baking tools and equipment safely and effectively.
  • Monitor kitchen appliance temperatures and report any discrepancies.
  • Ensure quality control of food preparation and portion sizes throughout service.
  • Assist in training, scheduling, and motivating team members.
  • Follow safety training and certification protocols.
  • Adhere to Standard Operating Procedures and brand identity guidelines.
  • Comply with health, safety, and hygiene standards.
