La figura dovrà:

  • Collaborare attivamente con lo chef per la migliore riuscita della partita, dall'ideazione di nuove proposte alla mise en place, sia in pasticceria che nei lievitati
  • Supervisionare il lavoro degli aiuti e commis in tutti i processi, dalla preparazione alla realizzazione
  • Seguire le diverse fasi della mise-en-place quotidiana
  • Durante il servizio aiutare nella preparazione e presentazione e collaborare con le altre partite al fine di garantire un corretto allineamento
  • Collaborare con lo chef e i colleghi nell'operatività ordinaria e straordinaria
  • Supportare lo chef nella preparazione per la banchettistica e eventuali richieste speciali dei clienti
  • Garantire una corretta gestione del piano HACCP previsto in tutti gli aspetti che riguardano la partita (ricezione, stoccaggio, lavorazione, pulizia, ecc)

Qualifiche

  • Attestato di scuola professionale di pasticceria
  • Ottime esperienze precedenti in ristoranti fine dining
  • Piena autonomia nella gestione delle attività ordinarie
  • Capacità di lavorare in team
