Part of the Luxury Group of Marriott International, Casa Brera is currently recruiting Japanese Chef de Cuisine to join the pre-opening team made of modern and authentic hospitality professionals.

Reporting to the Executive Chef, the role will be responsible for organizing staff and allocating resources for the Japanese Restaurant; allocating resources, execute controls, and systemize daily functioning; executing controls (orders, inventories, par levels); systemizing daily functioning and maintain efficient mise en place in the kitchen operations; food control, ensuring top quality and hygiene both for products and equipment; maintaining food cost at a minimum; train and develop the kitchen staff in a clear and proper manner.

This is full-time position, 5 days a week with 2 days off.The starting date is as soon as possible.

The impact you’ll makeYou will lead the outlet where the uniqueness of Japan’s food and drink culture comes to life. You will have the opportunity to carefully select a handpicked sake collection, the finest spirits and teas, broadens the mind and the palate’s understanding of the most traditional of Japan’s flavors. The menu is based on traditional Japanese cuisine with some incursions of products of Italian excellence. The sushi counter will focus on the quality of the raw material and on research of the more traditional Japanese flavors now difficult to find due to excessive diffusion of Asian/fusion cuisine.

In fact, the outlet mission is to bring authentic Japanese cuisine to Milan''s discerning Japanophiles. Here, the most excellent raw products are showcased and blended with a casual yet highly attentive approach from the other hand, twisting the gourmet culinary experience into a unique Japanese journey.

What you’ll doLeading kitchen operations providing directions for all day-to-day operations, understanding employee positions, utilizes interpersonal and communication skills to lead and encourage others.Serving as a role model, supervises and coordinates activities of cooks and workers engaged in food preparation.Demonstrate new cooking techniques, proper handling of raw food and equipment to staff.Supervises and coordinates activities of cooks and workers engaged in food preparation.Solicits employee feedback, utilizes an "open door" policy and reviews employee satisfaction results to identify and address employee problems or concerns.Reviews staffing levels to ensure that guest service, operational needs and financial objectives are met.

Setting and Maintaining Goals for Culinary Function and ActivitiesEstablishes goals including performance goals, budget goals, team goals, etc.Communicates the importance of safety procedures, detailing procedure codes, ensuring employee understanding of safety codes, monitoring processes and procedures related to safety.Manages department controllable expenses including food cost, supplies, uniforms and equipment.Participates in the budgeting process for areas of responsibility.Ensuring Culinary Standards and Responsibilities are Met

Provides direction for menu development.Recognizes superior quality products, presentations and flavor.Ensures compliance with food handling and sanitation standards.Follows proper handling and right temperature of all food products.Ensures employees maintain required food handling and sanitation certifications.Maintains purchasing, receiving and food storage standards.

Ensuring Exceptional Customer ServiceImproves service by communicating and assisting individuals to understand guest needs, providing guidance, feedback, and individual coaching when needed.Displays leadership in guest hospitality, exemplifies excellent customer service and creates a positive atmosphere for guest relations.Responds to and handles guest problems and complaints.Empowers employees to provide excellent customer service. Establishes guidelines so employees understand expectations and parameters. Ensures employees receive on-going training to understand guest expectations.Reviews comment cards, guest satisfaction results and other data to identify areas of improvement.

Managing and Conducting Human Resource ActivitiesIdentifies the developmental needs of others and coaching, mentoring, or otherwise helping others to improve their knowledge or skills.Ensures employees are treated fairly and equitably.Trains kitchen associates on the fundamentals of good cooking and excellent plate presentations.Administers the performance appraisal process for direct report managers.Interacts with the Banquet Chef and Catering department on training regarding food knowledge and menu composition.Observes service behaviors of employees and provides feedback to individuals and or managers.Manages employee progressive discipline procedures for areas of responsibility.Ensures disciplinary procedures and documentation are completed according to Standard and Local Operating Procedures (SOPs and LSOPs) and supports the Peer Review Process.

What you’ll need:2 years’ management experience in culinary.Strong experience in Japanese Cuisine and raw food preparation mandatory.Ideally, knowledge of luxury and lifestyle hospitality operations in culinary.Passion, motivation, and adaptability.Intermediate Italian language and English knowledge would be an advantage.
