About the Role

We are seeking a highly skilled and experienced Pastry Coordinator to join our team at Tn Italy. As a key member of our culinary team, you will be responsible for coordinating and ensuring the daily preparation of desserts in our pastry area, adhering to our company standards.

Key Responsibilities
  • Preparation and Execution: Prepare all pastries according to company standard recipes and temperatures, ensuring they are composed, displayed, and served to the highest standards.
  • Ingredient Management: Prepare and mix ingredients for cooking and baking, including portioning, chopping, and storing food to ensure products are ready for recipes preparation.
  • Equipment Maintenance: Regularly check and report any malfunctions of pastry equipment to the pastry chef, demonstrating attention to detail and a commitment to operational efficiency.
  • Waste Reduction and Quality Control: Minimize waste and overproduction while meeting company standards, showcasing focus on operational efficiency and adherence to quality standards.
  • Safety and Quality: Participate in creating a dynamic work environment attentive to the culture of safety, highlighting dedication to fostering a workplace where safety is a priority for everyone. Conduct daily checks of pastry products in all onboard restaurants to guarantee excellent quality service.
  • Cleaning and Sanitation: Carry out daily cleaning procedures according to HACCP/USPH company standards, emphasizing dedication to maintaining a clean and safe workspace in compliance with industry regulations.
Requirements
  • Education: Upper secondary school diploma, preferably a culinary school diploma or equivalent.
  • Experience: At least 2 years of experience in the pastry sector within 5* hotels or pastry laboratories, reflecting commitment to excellence.
  • Knowledge: In-depth knowledge of food safety (HACCP) regulations.
  • Language: Good command of the English language at least at B1 level.
  • Availability: Available to live and travel aboard a cruise ship for the contract period of 5 months, working 7 days a week on shifts.
